We open the presentation of our Extra Virgin Olive Oils with the NOVELLO, because although it has only been in our list since 2021, we are all in love with it.
Every year, the tradition of the Olio Nuovo is a pleasure that is renewed with joy and awaited with trepidation.
The NOVELLO is the oil we bottle from the second week of harvest until our O.R.O. Blend is close to completion.
We cannot make a data sheet indicating precisely the cultivars that make it up because each year and as it is bottled its composition changes.
However, we can guarantee that the fragrance of NOVELLO will enchant you with its notes of freshly cut grass and unripe fruit.
It is a short but delicious moment to enjoy this NOVELLO oil on a simple slice of bread or on one of the many traditional dishes.
From pizza Margherita to pasta and beans or on a winter tomato salad, it will give you a moment of simple delight.

Olive Cultivars: 80% Ortice, Recioppella, and Ortolana. 20% Frantoio, Leccino, Moraiolo, and other local varieties harvested at the optimal stage of ripeness.
Extraction Method: Cold extraction using a Pieralisi two-phase continuous cycle.
Color: Intense yellow with distinct green reflections, slightly veiled.

Aromatic Notes: Elegant herbal notes with clear hints of borage and fresh fruit.

Aromatic Notes: Lightly ripened olive, unripe apple, wild and balsamic herbs.
